    • 62.5 g potatoes
    • 25 g celeriac
    • 12.5 g smoked tofu (optional)
    • 0.5 carrots
    • 0.25 onion 
    • 0.25 leek stalk
    • 0.25 garlic clove
    • 0.25 tbsp oil
    • 0.25 tbsp vegetable broth powder
    • 0.25 liter water
    • 0.25 bay leaf
    • Lovage or liquid seasoning for the typical spicy note
    • 0.25 tbsp vinegar (feel free to add more)
    • Salt, pepper to taste

    Optional: Soak the lentils overnight in plenty of water to reduce cooking time.

    Wash and peel your vegetables and cut them into small, bite-sized cubes. Also cut the smoked tofu into small pieces.

    Put oil in a pot and heat it over medium to high heat.

    Sauté the vegetables and tofu for a few minutes. Start with the onions and tofu, then gradually add the rest of the vegetables.

    Meanwhile, stir the vegetable broth powder into 1 liter of water or use homemade vegetable broth.

    Deglaze the vegetables with the vegetable broth.

    Add the lentils (without soaking water!), bay leaf, and lovage. Warning: Do not salt yet!

    Now: put the lid on and let the lentil stew cook for about 30 minutes* on low heat until the lentils and vegetables are soft but still firm. Stir occasionally to prevent burning.

    Add salt and vinegar only at the end, as well as optional parsley or cumin, and remove the bay leaf. Enjoy your meal!

    A warm, hearty lentil soup like grandma’s is simply something special! This lentil stew is vegan so that everyone can truly enjoy it. Traditional lentil stew reimagined, so to speak.
    While grandma used to add a lot of bacon and sausages to the lentil stew, we rely on a lentil stew without meat. Spices make our stew nicely flavorful, and the smoked tofu adds a delicious, smoky note. If you don’t like smoked tofu, you can simply use smoked paprika powder.
    Lentils are a game changer, especially in vegan nutrition. Brown lentils are often part of vegan lentil recipes and are not only tasty but also incredibly nutritious. They provide high-quality proteins, valuable fiber, and important vitamins and minerals.

    Lentil stew – vegan in your everyday life

    The lentil stew is simple and quick to make, making it perfect as a balanced dinner even on busy days. If you really don’t have time to chop vegetables, you can quickly blend them in a mixer. You can also use canned lentils (just double the amount) to reduce cooking time. Just rinse them briefly under running water and add them shortly before the vegetables are done.
