Zubereitung

1 Rinse the red lentils under running water and then soak them in water for at least 6 hours or overnight. Make sure to add enough water as the lentils will absorb a lot.
2 Drain the soaking water*. Add the lentils, 300 ml of fresh water, and a bit of salt to a blender and blend well until you get a fairly smooth batter. This takes a bit of time! You can also use an immersion blender. The batter should be quite liquid but not watery.
3 Heat a pan over medium heat and add some rapeseed oil.

Pour some batter into the hot pan. Immediately spread it out by tilting the pan slightly. The wrap should be fairly thin. I hold the pan at a slight angle while pouring so the batter spreads better.

Note: Depending on the size of your pan, you may need more or less batter to get the desired wrap thickness!

5 After about 4 minutes, small holes will appear on the surface of your wrap. That’s your sign to flip it. Be sure to cook the wraps long enough before flipping, otherwise they may stick and tear.
6 Cook the other side for about 2–3 minutes until done.

Done! Enjoy the wraps right away or store them under a kitchen towel to keep them soft and foldable.

Best of all: You can use this recipe for high-protein meal prep wraps. Once prepared, they’ll keep for several days in the fridge if stored airtight. Just let them reach room temperature before rolling, otherwise they may crack.
