    Zubereitung

    1

Peel and dice the vegetables. Onions, leeks, and celery should be finely chopped, the rest can be cut into roughly 1 cm rustic cubes. Put everything in a large bowl and cover the vegetables for later.

    2
Sauté the onions in some oil and optionally add the vegan bacon to briefly fry it.
    3
Add the peas and bay leaf as well.
    4

Pour everything with water and let your soup simmer for 70 minutes over medium heat with a lid. You may need to add some more water, peas need a lot of water. Stir occasionally!

    5

Add the remaining vegetables, salt generously (important: yes, only now!) and let your soup cook for another 15 minutes (or until the vegetables are done). Don’t forget to stir here too!

    6

Shortly before the end, optionally add vegan sausages to warm them up. You can leave them whole or slice them.

    7

Season everything with pepper and smoked paprika powder. A splash of vinegar rounds off the soup and many also like to add some mustard.

A little tip: Remove the bay leaf so no one accidentally finds it on their spoon.

    8

Distribute the soup onto plates or into bowls and garnish with freshly chopped parsley. Now you can enjoy your pea soup (vegan)!

    Recipe Note

A hearty pea soup is just right on cold days – even better if the pea soup is vegan.

Vegan pea soup, just the way you like it!

Pea soup means something different to all of us. While some make their pea soup without potatoes, others put so many potatoes in their soup that it should actually be called pea potato soup. Some like their soup with sausages, and others love their vegan pea soup with smoked tofu or completely without meat and meat alternatives. Whether thick pea soup or a somewhat more liquid version, you can easily adjust this recipe exactly how you like your pea soup.
And this is how our pea soup (vegan) will surely also taste good to non-vegans.

Grandma's pea soup – but vegan

Do you still remember that warm, cozy feeling when you smelled grandma's pea stew? Many of us have delicious memories of grandma's kitchen but can no longer eat the often very meat- and butter-heavy dishes because we now live vegetarian or vegan. Because we also wanted to feel like we were back in childhood, we veganized grandma's traditional pea soup recipe and are now sharing it with you so that you too can enjoy a pea soup like grandma's.

So this recipe for a pea stew is vegan, which means it is a pea soup without meat. BUT it doesn't necessarily have to be a pea soup without bacon – nowadays there are really tasty vegan bacon alternatives. But the same applies here: many things can be done, nothing has to be. If you're not a fan of vegan substitutes, you can simply leave out the cubes and instead add a smoky note to your stew with smoked paprika powder or smoked tofu. The same goes for the sausages: you can add vegan sausages – but the stew is delicious even without them!

Vegan pea soup recipe | Tips

Although this recipe for a pea soup (vegan) is really simple, we have some tips & tricks for you to get the best out of your soup:

    • Which peas for the pea soup?
Green, dried split peas are best. They are already peeled (surprise!) and therefore don’t need to be soaked or cooked for ages to become soft. If you can’t get peeled peas, you can also use unpeeled peas, but these must be soaked overnight in plenty of water.

    • The pea soup (vegan) is perfect as a meal prep dish. Prepare the soup comfortably and your lunch for the next day is ready. Just reheat the soup briefly and enjoy it. The next day it’s also nicely infused and even more flavorful.

    • You can decide how thick or thin you want your pea soup – just add more or less liquid according to your taste. You can also decide how soft you want your vegetables.

    • Chunky soups aren’t your thing or your kids protest if they see even the smallest piece of vegetable? Then just puree the soup! For this, I would only remove the sausages and bacon and add them back afterward.

    • Very important: Salt your pea soup (vegan or not) only towards the end when you add the rest of the vegetables. Otherwise, the peas might not become soft.

    Substitution table

How often do we want to cook a recipe but are missing certain ingredients or don’t like some components? For this case, we have a substitution table for you so you can adjust the pea stew recipe to your liking! Simply swap individual ingredients as you wish!

    • potatoes → omit

    • soup vegetables → celery, carrots, leek, and parsley separately

    • rapeseed oil → any other oil

    • vegan bacon cubes → smoked tofu or omit

    • dried green split peas → unsplit dried peas (must be soaked overnight!)

    • vegan sausages → smoked tofu or omit

Our pea soup is vegan, but of course you can also use animal ingredients if you want!
