    Prepare the dough for the apple cake with pudding:

    a. Line a 24 cm springform pan with baking paper.

    b. Mix all ingredients for the base of your apple cake with pudding except the butter. Then add the cold (!) butter and knead the mixture until you get a shortcrust pastry. Knead the dough as briefly as possible so it doesn't get too warm.

    c. Put the dough into the baking pan and press it with your hands into a base with 4-5 cm edges. If that doesn't work well, you can chill the dough again first. Very important: press the dough firmly!

    d. Prick holes in the base with a fork and place the baking pan in the fridge for now while we prepare the rest.

    Preparation of the apple filling:

    a. Wash, peel, and core the apples and cut them into about 1 cm cubes.

    b. Put the apple pieces with lemon juice, applesauce, sugar, and cinnamon into a large bowl and mix well. Cover the bowl and set aside.

    Now it's time for the pudding:

    a. Heat 400 ml of milk in a pot over low to medium heat – remember to stir occasionally.

    b. While the milk heats up, you can mix the remaining 100 ml of milk with the cornstarch, sugar, vanilla extract, a pinch of salt, and optionally a pinch of turmeric until there are no lumps left.

    c. Once the milk is hot and steaming, whisk in the cornstarch mixture vigorously.

    d. Let your pudding heat up again while stirring until it boils briefly and thickens.

    e. Remove it from the heat now and cover with cling film to prevent a skin from forming, then let it cool for a few minutes.

    Now the topping:

    For your topping, simply mix all the ingredients together – heat the coconut oil briefly beforehand to make it liquid.

    Preheat the oven to 180 degrees Celsius (top/bottom heat).

    Take the cake base out of the fridge and briefly whisk your pudding again. Pour the still lukewarm (important: no longer hot!) pudding onto the cake base and smooth it out.

    Distribute the apple cubes on the pudding and add the topping on top.

    Off to the oven: Bake the apple pie with pudding for about 45 minutes on the middle rack. If the cake darkens too early, you can cover it with some aluminum foil.

    Once the cake is done and the topping is golden brown, you can take it out of the oven and let it cool in the pan on a rack. Very important: Do not remove the cake from the pan too early, otherwise the pudding might leak or crack.

    After about 30 minutes, remove the springform and let the cake finish cooling. Serve your cake as is or with vanilla ice cream or vanilla sauce.

Our quick apple cake with shortcrust pastry is completely vegan, and sometimes we try to swap a few small things to keep the nutritional values within an acceptable range.     If you don't want an oat-nut mix on your cake but prefer "real" crumbles, here is the recipe for the world's best crumbles (Warning: sugar shock guaranteed):
    Simply knead together 250 g flour, 125 g sugar, 125 g vegan butter or margarine, and 1 packet of vanilla sugar roughly. It doesn't have to be perfectly kneaded. Shape your crumble dough into a ball and gently press it over your cake so the crumbs break off. Continue like this until your dough is used up and your cake is covered with delicious crumbs.
