What exactly is cashew butter and how is it made? We’ve taken a look behind the scenes for you!
Let’s start at the very beginning: Cashew trees grow in tropical regions such as Brazil or India. But the cashew nut doesn’t grow directly on the tree: instead, the so-called cashew apples grow on the tree. The cashew nut, as we know it, simply hangs on these apples – but it’s still inside a protective shell. By the way, the apple itself can also be processed further, though it’s not really common here. As soon as the apples ripen, the nuts are collected and laid out in the sun to dry. Then comes an important step: the cashew kernels are heated, usually roasted or steamed. This is crucial because the raw kernel is toxic and not edible. Only through heating does the cashew nut become edible. So if you ever pass by a cashew tree, don’t snack on the fresh kernels! Now the shells are removed and the kernels further processed: They are sorted, sometimes roasted again, and then ground into butter in large mills. The longer the grinding process, the more creamy and smooth the butter becomes. After a few more technical steps, the finished butter can be filled into jars and begin its journey to your kitchen.
By the way: We roast our cashew nuts gently – at lower temperatures and for a little longer. This way, the nuts don’t taste as bitter and fewer heat-sensitive nutrients are destroyed. Win-win.
And what does cashew butter taste like? It tastes very mild, slightly nutty, and a little sweet. It’s one of the smoothest nut butters – so if you don’t like the strong flavor of peanut butter, this nut butter could be just right for you!
