    • 0.4 garlic cloves
    • 0.4 tbsp olive oil
    • 100 ml vegetable broth
    • 0.2 tbsp medium-spicy mustard 
    • 0.05 tsp smoked paprika powder for a smoky note
    • salt
    • pepper
    • 0.2 splashes lemon juice
    • 0.2 pinch allspice (optional)
    • 40 g smoked tofu (often used as a meat substitute) or chopped vegan sausages (optional)

    Wash your kale thoroughly and remove the thick stems. Chop it finely.

    Bring about 3 liters of salted water to a boil and blanch (i.e., cook) your kale for 3 minutes. This helps it keep its nice color later. Salt the water generously: use a heaping teaspoon of salt per liter of water.

    Drain the kale after 3 minutes and quickly rinse it with cold water.

    While the kale is draining, peel and finely dice the onions and garlic.

    Heat the olive oil in a pot and sauté the onions over medium heat until translucent. Add the garlic for about 1-2 minutes.

    Now add your kale. Pour in the vegetable broth and let your kale simmer over low heat with the lid slightly ajar for about 30 minutes. It should be soft but not mushy. Stir occasionally and add more vegetable broth if it evaporates.

    If you use smoked tofu, you can chop it in the meantime and fry it sharply in some oil. Add it to the kale 10 minutes before the end of cooking. This gives your kale a particularly hearty flavor.

    If the kale is still too watery shortly before the end of the cooking time, you can remove the lid for the last few minutes.

    Stir in the mustard and season to taste with salt, pepper, paprika powder, lemon juice, and allspice. Enjoy your meal!
