The best thing about winter? It’s kale season again! With our vegan kale recipe, you can easily bring this hearty classic right to your home.
Nutritional values per serving
Instructions
Wash your kale thoroughly and remove the thick stems. Chop it finely.
Add your kale, pour in the vegetable broth, and let it simmer gently with the lid slightly ajar for about 30 minutes. The kale should be tender but not mushy. Stir occasionally and add more broth if it evaporates too much.
If the kale seems too watery near the end, remove the lid for the last few minutes to reduce the liquid.
Stir in the mustard and season to taste with salt, pepper, paprika powder, lemon juice, and allspice. Enjoy your meal!

Kale, just the way you like it!
Whether you prefer your kale as a vegetarian dish, a hearty vegan stew, or with (plant-based) sausages – this recipe works for every style. You can easily adjust it to your taste!
Kale without meat: Cooking kale vegan doesn’t mean losing flavor. Thanks to the spices, your kale tastes just as rich and hearty – and if you miss sausages, vegan ones make the perfect side.
Kale with smoked tofu: If you love that smoky, meaty flavor, smoked tofu is your best friend. It might sound unusual at first, but it’s packed with protein and adds depth to your dish.
With potatoes as a stew or simply on its own: Sometimes you want a full meal with sides, and sometimes the kale itself is the star. Everything’s possible!
No matter how you make it, our vegan kale recipe is simple, delicious, and your go-to winter warmer. In just a few easy steps, you’ll have a cozy, hearty meal on your plate. Bonus: Kale makes great meal prep – it tastes even better the next day after resting overnight!
