    • 0.4 tbsp olive oil
    • 100 ml vegetable broth
    • 0.2 tbsp medium mustard
    • 0.1 tsp smoked paprika powder for a smoky flavor

    Wash your kale thoroughly and remove the thick stems. Chop it finely.

    2 Bring about 3 liters of salted water to a boil and blanch your kale for 3 minutes. This helps it keep its vibrant color. Don’t be shy with the salt: use one heaping teaspoon per liter of water.
    3 Drain the kale after 3 minutes and rinse quickly with cold water.
    4 While the kale drains, peel and finely dice the onions and garlic.
    5 Heat olive oil in a pot and sauté the onions over medium heat until translucent. Add the garlic and cook for 1–2 minutes.

    Add your kale, pour in the vegetable broth, and let it simmer gently with the lid slightly ajar for about 30 minutes. The kale should be tender but not mushy. Stir occasionally and add more broth if it evaporates too much.

    7 If you’re using smoked tofu, dice it and fry it in a bit of oil until crisp. Add it to the kale about 10 minutes before the end of cooking for a heartier, smoky flavor.

    If the kale seems too watery near the end, remove the lid for the last few minutes to reduce the liquid.

    Stir in the mustard and season to taste with salt, pepper, paprika powder, lemon juice, and allspice. Enjoy your meal!
