Instructions

Optional: Soak the lentils overnight in enough water to shorten the cooking time.

2 Wash, peel, and dice your vegetables into bite-sized cubes. Dice the smoked tofu as well.
3 Add oil to a pot and heat over medium-high heat.
4 Sauté the vegetables and tofu for a few minutes. Start with onions and tofu, then gradually add the rest of the vegetables.

Meanwhile, stir the broth powder into 1 liter of water or use homemade vegetable broth.

Deglaze the vegetables with the broth.

Add the lentils (without soaking water), bay leaf, and lovage. Important: Do not salt yet!

8 Cover and simmer the lentil stew for about 30 minutes* on low heat until lentils and veggies are soft but still slightly firm. Stir occasionally to prevent sticking.

Add salt and vinegar at the end, along with parsley or cumin if desired, and remove the bay leaf.
