  • 15 g coconut oil (or a bit more if your dough doesn’t hold together)
  • 1 flaxseed egg (1 tbsp ground flaxseed + 3 tbsp water)
  • 100 g rolled oats
  • 60 g Vegan Protein (vegan protein powder – choose your flavor: cocoa, berry, or hazelnut)
  • a pinch of salt
  • 100 ml plant-based milk alternative
  • 1-2 tbsp nut butter of your choice
  • a bit of maple syrup to sweeten
  • optional, but highly recommended*: a handful of chopped nuts, seeds, or dried fruits
  • Toppings (optional): vegan dark chocolate, dried berries or coconut chips

Zubereitung

1 Preheat your oven to 180°C top/bottom heat.
2 Prepare a flaxseed egg by stirring the flaxseed into hot water and letting it sit for a few minutes.
3 Meanwhile, melt the coconut oil in a small pot on the stove or in the microwave.
4 Mix all the dry ingredients (oats, protein powder, salt, optional nuts, etc.).

Then add the coconut oil, milk alternative, nut butter, and flaxseed egg and knead the dough until well combined.

6 Now is the time to taste your dough and optionally add maple syrup to sweeten. Make it suit your taste!

You're almost there: Spread the mixture onto a baking tray and press it down firmly with a spoon (important!) to a height of about 1.5 cm.

Bake the protein bars for 15-20 minutes until golden brown.

After baking, let the bars cool, cut into bar shapes, and your breakfast for the next few days is ready.

If you like, you can top your bar with some melted dark chocolate, nut butter, and other toppings (berries…)

Store the bars well packed in the fridge and consume them within the next few days!

My bars fall apart – help!
Add more coconut oil, nut butter, milk alternative, or another flaxseed egg. Press the dough firmly into the mold and wait until fully cooled before cutting. That should do the trick!
