Instructions
Soak the dates in some warm water to make them easier to process later.
Weigh all other ingredients and put them in a high-powered blender.
Remove the dates from the water, take out the pits (your blender will thank you!) and add them to the other ingredients.
Now it's time to blend: Blend your mixture in intervals, pushing the sides down each time. If it feels like it's not mixing, add a little plant milk.
Once you have a loose mixture that can be kneaded like dough, remove it from the blender.
Shape small balls (about 1 tbsp per ball) with your hands and roll them in your toppings. If the toppings don't stick, moisten your balls with the date soaking water or some plant milk.
Store your protein balls in an airtight container in the fridge for up to a week.
