    Cream room-temperature vegan butter and cashew butter until smooth.

    Then add coconut blossom sugar, yogurt, vanilla extract, and a small pinch of salt and mix everything in.

    In a second bowl, mix flour, protein powder, baking powder, and starch.

    Now put all prepared ingredients together in a large bowl and knead briefly (!) but well. The dough can be softer than you usually know from cookies! If it’s still dry, you can add some plant-based milk.

    Shape the dough into a ball, wrap it in cling film, and let it rest in the fridge for at least 60 minutes.

    After resting, preheat the oven to 175 °C top/bottom heat.

    Roll the dough out 5-7 mm thin on a lightly floured surface.

    Grab your favorite cookie cutters and cut out pretty shapes.

    Now cut the two protein bars into as many slices as you have cookies and spread them on your cut-out cookies.

    Place the protein cookies on a baking sheet lined with parchment paper and put them in the oven (middle rack).

    After about 7-10 minutes, the edges will turn golden brown – then the cookies are done. You should take them out quickly because they dry out fast.

    Now flatten the softened protein bars with the back of a small spoon so they cover the cookies like a glaze.

    Then let the cookies cool on the baking sheet for at least 10 minutes before transferring them to a cooling rack. Otherwise, they break easily.

    When the fitness cookies are completely (!) cooled, you can prepare the glaze: Mix all the ingredients together.

    If needed, add vegan milk alternative drop by drop until you get a creamy consistency (about like cream cheese).

    Spread the glaze on your protein cookies and then dust them with some cinnamon.

    Let your protein cookies dry for at least 1 hour before digging in. You can store leftovers in a cookie tin in a cool, dry place for several days.

    The Christmas season can be really tough for people who watch their protein intake. Everywhere you get sugary cookies offered, which taste really good but don’t really fit into the diet plan. (Little reminder: It’s totally fine to put the diet plan aside at home over Christmas!)
    Often, in the end, people just give in to be part of the lovely tradition – even though they don’t really feel comfortable with it.

    But this year you have the choice and can consciously decide for cookies AND protein. Our protein cookies combine the best of both worlds. Surprise your loved ones this year with homemade cookies!

     

    Important tips for your protein cookies

    To make your protein cookies really good, we have collected the most important tips & tricks for you:

    1. Be sure to chill the dough
      Even if you want to be quick, the dough must chill for at least 60 minutes to stay stable and rollable. If time is tight, you can also leave the dough in the fridge overnight and bake it the next day.

    2. Use butter at room temperature
      Unlike many other cookies, the vegan butter in our protein cookies must be at room temperature. Soft butter combines optimally with protein powder & cashew butter – this makes the dough nice and smooth.

    3. Don’t bake too long
      Don’t bake your protein cookies too long – cookies with protein powder dry out quickly. They can stay quite light.

    4. Glaze only on completely cold cookies
      Give your protein cookies enough time to cool down, otherwise your glaze will just melt away.

    5. Protein glaze becomes more liquid over time
      So make the batter a bit thicker and, if necessary, add a little more protein powder later to stabilize the glaze again.

      Frequently asked questions

      Yes, you can safely use Vetains Vegan Protein for baking. In fact, we often recommend this because our vegan protein powder works incredibly well in baked goods. There are more “Baking with Protein Powder” recipes on our recipe page.

      Saving the cookies until Christmas could be difficult. Due to the many fresh ingredients, the cookies do not last as long as typical Christmas cookies. But you can store them in a cool and dry place for a few days - after that they will probably be empty anyway.

      Yes, you can cut out this cookie recipe with egg white like normal Christmas cookies with your favorite shapes - whether it's a snowflake, Santa Claus or a Christmas tree. Because that's just part of the Christmas season.
