    Mix all dry ingredients.

    Then add milk and applesauce and whisk everything into a smooth batter. If the batter isn’t sweet enough for you, you can add a bit more applesauce now. If your batter gets lumpy, you can briefly blend it with an immersion blender.

    Let the batter rest for 10-15 minutes. This is important so the consistency is right when cooking. If you don’t have time to wait, just add a little more flour to the batter.

    Heat your crepe pan or a large regular pan over medium heat. Let some vegan butter melt in the pan and add 1 ladle of batter.

    Immediately swirl the pan so the batter spreads evenly across the pan. Reminder: We want thin crepes – adjust the amount if needed.

    After about 30-60 seconds or once the crepe is golden brown on the bottom, you can flip it once.

    Let the other side finish cooking briefly.
