If you feel the same, I’ve got great news for you: with our recipe, you can easily make your own vegan protein muffins with blueberries. Moist, fruity, sweet, and incredibly delicious with an extra dose of protein!

    Instructions

    1 Preheat the oven to 180°C (top/bottom heat).
    2 First, make vegan buttermilk by mixing soy milk with lemon juice and letting it sit for 5-10 minutes. Don’t worry if the texture changes – that’s exactly what should happen.
    3 Meanwhile, mix the flour (except for 1 tbsp), protein powder, baking powder, salt, and starch.
    4 Add maple syrup, oil, and vanilla extract to the buttermilk and stir briefly.
    5 Pour the wet ingredients into the dry ingredients and mix well. Don’t overmix!
    6 Coat the blueberries in 1 tbsp flour and fold them into the batter. If using frozen berries, do not thaw them beforehand – just mix them in frozen!

    Line your muffin tin with paper liners, divide the batter among 16 cups, and bake away.

    8 Bake the muffins for about 25 minutes on the middle rack. They’re done when golden brown and they pass the toothpick test.
    9 Insert a wooden toothpick – if only a few crumbs stick, they’re done. If there’s still wet batter, they need more time.

    Tip: If your vegan protein muffins are browning too quickly on top before the end of baking time, simply cover them with foil.
