Instructions
First, finely chop the onion, garlic, ginger, and chili. Then add coconut oil to a pan and heat. Sauté the chopped ingredients briefly on high heat and add the spices.
Now add the lentils, cover with water, and let simmer with the lid on for 5–10 minutes.
Next, add the pureed tomatoes and let simmer again for 5–10 minutes. Once the lentils are still slightly firm, add the coconut milk.
When the lentils are soft, it’s ready to serve. Enjoy!
