Wash the cucumber. Grate the cucumber into slices using a kitchen grater and put them in a bowl. Sprinkle a pinch of salt over the cucumbers and let them sit for about 10 minutes until they release some water. This prevents our salad from becoming watery later.
Meanwhile, you can slice the onion thinly and wash and chop the dill. If you don’t have fresh dill on hand, you can also use dried dill.
Stir together soy yogurt, mustard, lemon juice, vinegar, rapeseed oil, and pepper in a small bowl – this is the vegan cucumber salad dressing. Feel free to taste the dressing now and adjust it to your liking. Don’t forget: the salted cucumbers will add some saltiness.
After 10 minutes, drain the liquid from the cucumber, pour the dressing over the cucumber, and mix everything well. Season the vegan cucumber salad with salt and lemon juice to taste and enjoy! Alternatively, you can chill it for about 30 minutes and then serve it ice-cold.

This cucumber salad recipe is my go-to in summer. On really hot days, I usually don’t feel like warm food. Then this cucumber salad is perfect: light, cool, and really refreshing. And on other days, I need a quick side for grilling that’s easy to make and that everyone really enjoys. And the preparation? So simple that you can easily manage it even after a long day at the lake.
What I especially love: vegan cucumber salad goes well with potatoes, bread, grilling, or simply solo as a light meal.

For me, it’s clear – the best dressing is a fresh yogurt dressing for cucumber salad with dill! And you can make it vegan too. Our dressing reminds you of grandma’s cucumber salad with yogurt and mustard: creamy, mildly tangy, with lots of dill and a big pinch of love.
The dressing for cucumber salad (vegan) here consists of unsweetened soy yogurt, vinegar, oil, lemon juice, sweet mustard, pepper, and dill. The cucumber salad yogurt dressing becomes nice and creamy when you mix the soy yogurt well with the vinegar and rapeseed oil. The lemon juice makes the salad taste fresh, and the mustard adds a pleasant sweetness. A few fresh onions complete the salad and add a bit of spice. And the dill? For me, it’s a must!

Salt and drain the cucumber: The cucumbers should be drained with salt before preparation – this is the most important step. Because of the high water content in cucumbers, the dressing would otherwise be diluted and your cucumber salad with yogurt dressing would become watery instead of creamy. So: grate cucumber, salt, let sit for 10 minutes, pour off water.
Use fresh dill: Dill is the soul of this cucumber salad. It’s best to chop it just before serving. Dried dill works too, but it’s nowhere near as intense in flavor.
Acid-sweet balance: Some vinegar and lemon juice on one side, sweet mustard on the other. This brings the perfect balance between sweet and sour! The yogurt dill dressing lives from this balance between acidity, creamy yogurt, and fresh herbs.
