Zubereitung
Put the berries in a small pan and warm them over medium heat for 5-10 minutes. If you prefer it thicker, you can add some starch or guar gum.
Mash the banana with a fork in a bowl until smooth.
Now add flour, baking powder, salt, and almond milk and mix everything into a smooth batter.
Heat a pan over medium heat with 2 tsp oil. Swirl the pan so the oil covers the entire surface. Now add a heaping tablespoon of batter to the pan and cook the pancakes for 3-4 minutes on each side. Since you can't make them all at once, keep them warm in the oven.
Now you can stack the pancakes on a plate and serve with the berry compote and optionally some maple syrup.
