Instructions
Place the berries in a small pan and warm them over medium heat for 5–10 minutes. If you like it thicker, you can add a little starch or guar gum.
Mash the banana with a fork in a bowl until smooth.
Add flour, baking powder, salt, and almond milk, then mix everything into a smooth batter.
Heat a pan over medium heat with 2 tsp of oil. Swirl the pan so that the oil covers the entire surface. Now add a heaped tablespoon of batter to the pan and cook the pancakes for 3–4 minutes on each side. Since you can’t make them all at once, it’s best to keep them warm in the oven.
Now you can stack the pancakes on a plate and serve them with the berry compote and optionally some maple syrup.
