Instructions
Prepare the dough for the apple cake with custard:
a. Line a 24 cm springform pan with baking paper.
b. Mix all the ingredients for the crust except the butter. Then add the cold (!) butter and knead until a shortcrust forms. Knead as briefly as possible to prevent the dough from getting too warm.
c. Press the dough into the baking pan to form a base with a 4–5 cm edge. If it’s too sticky, chill the dough again. Very important: press the dough firmly into place!
d. Poke holes in the base with a fork and chill the pan while preparing the rest.
Prepare the apple filling:
a. Wash, peel, and core the apples, then cut them into roughly 1 cm cubes.
b. Combine the apple pieces with lemon juice, applesauce, sugar, and cinnamon in a large bowl. Mix well, cover, and set aside.
Now for the custard:
a. Heat 400 ml of milk in a saucepan over low to medium heat, stirring occasionally.
b. While heating, mix the remaining 100 ml of milk with cornstarch, sugar, vanilla extract, salt, and optional turmeric until smooth.
c. Once the milk steams, whisk in the cornstarch mixture vigorously.
d. Bring the custard to a brief boil while stirring until it thickens.
e. Remove from heat, cover with plastic wrap to prevent a skin from forming, and let cool for a few minutes.
Now for the topping:
Mix all topping ingredients – briefly heat the coconut oil first so it becomes liquid.
Once golden brown, remove the cake and let it cool in the pan on a rack. Important: don’t remove it too early or the custard might leak or tear.
Enjoy!

Grandma’s apple cake with vanilla custard and streusel
As the days get cooler and the sunlight turns golden, autumn arrives – the perfect time for a juicy apple cake with streusel and custard.
Although, to be honest, this cake tastes amazing any time of year.
This simple apple cake reminds us of the ones Grandma used to bake. We’ve kept some of her secrets – like generous use of sugar and fat – but modernized others. Our quick shortcrust apple cake is completely vegan, and we’ve adjusted some ingredients for a better nutritional balance. But honestly, sometimes that’s secondary. For the best apple cake with vanilla custard, we’re happy to look the other way.
And if you don’t have a springform pan, maybe Grandma will lend you hers – just make sure to pay her back with a slice of your delicious cake!
The world’s best streusel
If you prefer traditional crumb topping instead of the oat-nut mix, here’s the ultimate streusel recipe (warning: sugar overload ahead):
Knead together 250 g flour, 125 g sugar, 125 g vegan butter or margarine, and 1 packet of vanilla sugar until crumbly. Form the dough into a ball and crumble it over your cake until evenly covered.
