    Instructions

    Prepare the dough for the apple cake with custard:

    a. Line a 24 cm springform pan with baking paper.

    b. Mix all the ingredients for the crust except the butter. Then add the cold (!) butter and knead until a shortcrust forms. Knead as briefly as possible to prevent the dough from getting too warm.

    c. Press the dough into the baking pan to form a base with a 4–5 cm edge. If it’s too sticky, chill the dough again. Very important: press the dough firmly into place!

    d. Poke holes in the base with a fork and chill the pan while preparing the rest.

    Prepare the apple filling:

    a. Wash, peel, and core the apples, then cut them into roughly 1 cm cubes.

    b. Combine the apple pieces with lemon juice, applesauce, sugar, and cinnamon in a large bowl. Mix well, cover, and set aside.

    Now for the custard:

    a. Heat 400 ml of milk in a saucepan over low to medium heat, stirring occasionally.

    b. While heating, mix the remaining 100 ml of milk with cornstarch, sugar, vanilla extract, salt, and optional turmeric until smooth.

    c. Once the milk steams, whisk in the cornstarch mixture vigorously.

    d. Bring the custard to a brief boil while stirring until it thickens.

    e. Remove from heat, cover with plastic wrap to prevent a skin from forming, and let cool for a few minutes.

    Now for the topping:

    Mix all topping ingredients – briefly heat the coconut oil first so it becomes liquid.

    5 Preheat the oven to 180°C (top/bottom heat).
    6 Remove the crust from the fridge and briefly whisk the custard. Pour the lukewarm (not hot!) custard onto the crust and smooth it out.
    7 Spread the apple cubes over the custard and sprinkle the topping on top.
    8 Bake the apple cake with custard for about 45 minutes on the middle rack. If it browns too early, cover with foil.

    Once golden brown, remove the cake and let it cool in the pan on a rack. Important: don’t remove it too early or the custard might leak or tear.

    10 After about 30 minutes, remove the springform ring and let it cool completely. Serve as is or with vanilla ice cream or custard sauce.
