  • 3 large, very ripe bananas (the riper the bananas, the sweeter the protein-rich banana bread)
  • 60 g maple syrup
  • 60 g melted coconut oil
  • 50 ml plant-based milk alternative
  • 2 flax eggs (2 tbsp ground flaxseed + 5 tbsp hot water)
  • 200 g wheat flour
  • 30 g chocolate protein powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 pinch of salt
  • optionally some oil to grease the baking pan
  • optional: a handful of chopped nuts of your choice
  • Toppings (optional): 1 banana, chocolate chips, coconut chips

Zubereitung

1 Preheat your oven to 180°C convection.

Prepare your flax egg: Mix the flaxseed with hot water and let it soak for 10 minutes.

3 In the meantime, mash the bananas with a fork.
4 Put all the wet ingredients into a bowl and mix them together.
5 Add the dry ingredients and stir well until you have a smooth batter.
6 That’s almost it: Grease your loaf pan or line it with parchment paper. Pour in your batter, smooth it out, and add your desired toppings: a lengthwise-sliced peeled banana, some chocolate chips or coconut chips.

Into the oven – bake your protein banana bread for about 1 hour on the middle rack. To check if it’s done, use the classic toothpick test: insert a wooden skewer into the bread – if there’s still a lot of batter sticking to it, it needs more time; if the skewer comes out mostly clean, your delicious bread is ready to eat!

Tip: If your protein banana bread browns on top before the baking time is up, you can cover it with some aluminum foil.
