    Instructions

    1 Cream together room-temperature vegan butter and cashew butter.
    2 Then add coconut blossom sugar, yogurt, vanilla extract, and a small pinch of salt and mix well.
    3 In a second bowl, mix flour, protein powder, baking powder, and starch.

    Add all prepared ingredients to a large bowl and briefly (!) knead them together. The dough may be softer than classic cookie dough. If it’s still too dry, add a little plant-based milk.

    5 Shape the dough into a ball, wrap it in cling film, and let it rest in the fridge for at least 60 minutes.
    6 After resting, preheat the oven to 175 °C top/bottom heat.
    7 Roll out the dough on a lightly floured surface to about 5–7 mm thickness.
    8 Grab your favorite cookie cutters and cut out shapes.
    9 Cut the protein bars into as many slices as you have cookies and place them on the cut-out cookies.
    10 Place the protein Christmas cookies on a baking tray lined with parchment paper and bake on the middle rack.
    11 After about 7–10 minutes, the edges will turn golden brown – then the cookies are done. Remove them quickly so they don’t dry out.
    12 Use the back of a small spoon to spread the softened protein bars flat so they cover the cookies like icing.
    13 Let the cookies cool on the tray for at least 10 minutes, then transfer them to a wire rack so they don’t break.
    14 Once the protein Christmas cookies are completely (!) cooled, prepare the glaze by mixing all ingredients together.
    15 If needed, add plant-based milk drop by drop until you reach a creamy consistency (similar to cream cheese).
    16 Spread the glaze over your protein Christmas cookies and dust with a little cinnamon.

    Let the protein Christmas cookies dry for at least 1 hour before enjoying. Store leftovers in a cookie tin in a cool, dry place for a few days.

    1. Always chill the dough
      The dough must chill for at least 60 minutes so it stays stable and easy to roll out. If needed, you can also chill it overnight.

    2. Use room-temperature butter
      Soft vegan butter combines perfectly with protein powder & cashew butter for a smooth dough.

    3. Don’t bake too long
      Protein Christmas cookies can dry out quickly, so keep them fairly light in color.

    4. Only glaze completely cooled cookies
      Otherwise, the glaze will melt.

    5. The protein glaze becomes more fluid over time
      Mix it slightly thicker and add more protein powder if needed.
