    Instructions

    1 Warm the water slightly, dissolve the yeast in it, and add the maple syrup. Let the mixture rest for 10 minutes.
    2 Mix all dry ingredients together.

    Add the dry ingredients and quark to the yeast water and knead the dough for about 10 minutes.
    Note: It’s completely normal if the dough is still slightly sticky!

    4 Cover the dough with a kitchen towel and let it rise in a warm place for 1–1.5 hours.
    5 Shape the dough into 8 round rolls and place them on a baking tray lined with parchment paper. If the dough sticks a lot, moisten your hands with water.

    Let the rolls rest covered for another 30–45 minutes and preheat the oven to 230°C (top/bottom heat).

    7 Cut a cross into the top of each roll, spray or brush them with water, and sprinkle with seeds of your choice.

    Into the oven! Bake the rolls for about 10 minutes on the middle rack. Then reduce the temperature to 200°C and bake for another 8–12 minutes. If they turn golden on top, that’s a good sign they’re done.
    Tip: Place an oven-safe bowl of hot water in the oven to create steam!

    Let the rolls cool on a rack and enjoy them with toppings of your choice!
    If you want a crispier crust, briefly (!) cover the rolls with a damp cloth.

    Bake Your Own Protein Rolls

    Classic protein rolls too boring? Time for something new! With this simple protein roll recipe, you can easily make sweet rolls or protein pizza rolls.

    Sweet rolls: Swap the neutral protein powder for chocolate protein powder or banana protein powder and add more sweetener. Bake as usual and skip the toppings.

    Pizza rolls: Skip the seeds and add Italian herbs to the dough. Bake as usual, then slice the cooled rolls open and top like a pizza with tomato sauce, mushrooms, onions, (vegan) cheese, and anything you like. Bake again at 180°C (fan setting) until the cheese has melted.
