    Looking for a crispy and fluffy roll for breakfast that’s high in protein? Then this high-protein roll recipe with almost 10 g of protein per roll is just right for you.

    Our rolls are quite small, so you can easily enjoy two or more.

    • 18.75 g water
    • 1.875 g fresh yeast
    • 0.125 tsp maple syrup
    • 25 g soy quark 
    • 18.75 g flour of your choice (use a bit more water for wholegrain flour)
    • 7.5 g neutral protein powder 
    • 2.5 g ground flaxseeds
    • 2.5 g psyllium husks
    • 2.5 g sunflower seeds (optional)
    • 0.125 tsp salt
    • Toppings (optional)

    • Seeds and grains (poppy seeds, sunflower seeds, flaxseeds, …)

    • For extra flavor, add caraway, onions, garlic & co. to the dough

    Instructions

    1 Slightly warm the water, dissolve the yeast in it, and add the maple syrup. Let this mixture sit for 10 minutes.
    2 Mix all dry ingredients together.

    Add the dry ingredients and quark to the yeast water and knead the dough for about 10 minutes.
    Note: It’s completely normal if the dough is still slightly sticky!

    4 Let the dough rest, covered with a kitchen towel, for 1–1.5 hours in a warm place.
    5 Form 8 round rolls from the dough and place them on a baking tray lined with parchment paper. If the dough is sticky, wet your hands with water.

    Let the rolls rest again for 30–45 minutes, covered, and preheat the oven to 230°C (top/bottom heat).

    7 Cut a cross on top of the protein rolls, spray or brush them with water, and sprinkle with seeds of your choice.

    Bake the rolls for about 10 minutes on the middle rack. Then reduce the temperature to 200°C and bake for another 8–12 minutes. When they turn golden brown on top, they’re done.
    Tip: Place an ovenproof bowl with hot water inside the oven to create steam!

    Let the rolls cool on a rack and enjoy them with your favorite toppings!
    If you want a crisp crust, briefly cover the rolls with a damp cloth.

    Baking your own protein rolls

    Our quark rolls are made with carefully selected ingredients:

    Tip: You can also freeze the protein rolls. They’ll stay fresh for a long time, and you can thaw them when needed. Alternatively, store them in an airtight container – they’ll keep for several days at room temperature. If they get a bit dry, sprinkle with water and reheat briefly in the oven – they’ll be as good as new!


    Variations

    Plain protein rolls too boring? Try something new! With this easy recipe, you can also make sweet rolls or pizza-style protein rolls.

    Sweet rolls: Replace the neutral protein powder with chocolate protein powder or banana protein powder and add more sweetness. Bake as usual, just skip the toppings.

    Pizza rolls: Skip the seeds and add Italian herbs to the dough instead. Bake the protein rolls as usual. Once cooled, slice them open and top like a pizza with tomato sauce, mushrooms, onions, (vegan) cheese, and whatever you like. Bake again at 180°C (fan) on a high rack until the cheese has melted.

      Yes! You can also make the vegan quark rolls without protein powder. Just add a bit more flour to the dough instead. Thanks to the quark, the rolls will still be rich in protein — just a little less than with protein powder.
