Instructions
Add the dry ingredients and quark to the yeast water and knead the dough for about 10 minutes.
Note: It’s completely normal if the dough is still slightly sticky!
Let the rolls rest covered for another 30–45 minutes and preheat the oven to 230°C (top/bottom heat).
Into the oven! Bake the rolls for about 10 minutes on the middle rack. Then reduce the temperature to 200°C and bake for another 8–12 minutes. If they turn golden on top, that’s a good sign they’re done.
Tip: Place an oven-safe bowl of hot water in the oven to create steam!
Let the rolls cool on a rack and enjoy them with toppings of your choice!
If you want a crispier crust, briefly (!) cover the rolls with a damp cloth.

Bake Your Own Protein Rolls
Our quark rolls are made with carefully selected ingredients:
- fiber from seeds and grains
- protein from protein powder and quark
- unsaturated fatty acids from seeds and grains
Tip: You can also freeze the protein rolls. This keeps them fresh for a long time and lets you defrost them whenever needed. Otherwise, store them in an airtight container at room temperature for several days. If they become a bit dry, lightly moisten them with water and briefly reheat in the oven – they’ll be as good as fresh and nice and crispy.
Variations
Classic protein rolls too boring? Time for something new! With this simple protein roll recipe, you can easily make sweet rolls or protein pizza rolls.
Sweet rolls: Swap the neutral protein powder for chocolate protein powder or banana protein powder and add more sweetener. Bake as usual and skip the toppings.
Pizza rolls: Skip the seeds and add Italian herbs to the dough. Bake as usual, then slice the cooled rolls open and top like a pizza with tomato sauce, mushrooms, onions, (vegan) cheese, and anything you like. Bake again at 180°C (fan setting) until the cheese has melted.
