    Juice the lemon and finely chop the garlic.

    Combine tahini, lemon juice, garlic, and salt in a bowl and stir well. Don’t be surprised: the mixture will initially be thick and lumpy – the sauce becomes creamy in the next step.

    Alternatively, you can put all ingredients in a high-speed blender and blend for 30 seconds to 1 minute.

    Slowly whisk in the hot water.

    Optionally season the tahini sauce with cumin, chili flakes, and a drizzle of olive oil, then give it one final good stir.
