    Instructions

    1 Mix the dry ingredients in one bowl and the wet ingredients in another.
    2 Gradually add the wet ingredients to the dry ingredients and stir the batter vigorously.
    3 Let the batter rest at room temperature for 20 minutes and meanwhile preheat the oven to 170 °C fan-assisted.
    4 Spread the batter onto a deep baking tray lined with parchment paper and smooth it out with a damp spatula. The gingerbread should be about 1–1.2 cm thick.
    5 Into the oven: bake the vegan gingerbread for about 10–15 minutes. As soon as the surface turns matte, remove it. It shouldn’t get too dark, as gingerbread dries out very quickly.
    6 Very important: when you take the gingerbread out of the oven, it’s completely normal for it to still be soft – it will firm up as it cools.
    7 Let the gingerbread cool until it’s only slightly warm (about 10–15 minutes), then either cut it into pieces of any size or use lightly greased cookie cutters to cut out stars, hearts, or figures.

    If you’d like to decorate the gingerbread, let it cool completely on a wire rack and then decorate it. Otherwise, place it while still lukewarm into an airtight cookie tin and store it sealed for about 3–5 days in a cool place.
    Secret tip: add a quarter of an apple to the tin for 24 hours to make the gingerbread extra soft.

    Recipe Note

    Too thin, too dry, not festive enough – baking vegan gingerbread used to be my ultimate challenge. With this easy vegan gingerbread recipe, that’s finally a thing of the past. Vetain’s gingerbread is simple and foolproof – because the Christmas season is too short for failed gingerbread.

     

    Hearts, figures, or simple squares?

    Whether you prefer cute hearts or simple squares, vegan gingerbread always tastes great! Depending on what you plan to do with your gingerbread, different shapes work better:

    • Rectangles: Great if you want to decorate your gingerbread with icing – although a beautifully decorated heart can also look lovely.

    • Gingerbread figures: The classic gingerbread man is always an eye-catcher.

    • Hearts, stars & more: Perfect if you want to coat your vegan gingerbread with chocolate or gingerbread cream.

    How to do it: After baking, wait about 10–15 minutes until the gingerbread is still slightly warm (this makes it easiest to handle without breaking), then either cut it into the desired shape or use cookie cutters to make vegan gingerbread hearts, figures, or stars.

    Delicious decoration

    Vegan gingerbread tastes great on its own – but with the right decoration, it becomes even more festive (and delicious). Because who says no to chocolate, gingerbread cream & more?

    You have several options for decorating your gingerbread:

    • Homemade chocolate glaze: Dark chocolate with a little coconut oil gives your vegan gingerbread a beautiful shine.

    • The classic: Icing & almonds. Simple icing made from powdered sugar and lemon juice works as a base and as glue for the almonds.

    • Icing details: For the classic gingerbread house look, pipe patterns with white icing.

    • Gingerbread cream: My absolute favorite. Spread gingerbread cream on the gingerbread and top with nuts or dried fruits.

    Decorating is most fun together with loved ones. Why not host a pre-Christmas gingerbread party and decorate delicious gingerbread together?

    Tips for the best vegan gingerbread

    1. Stick to the resting time
      Resting times may be annoying, but they’re really important for this gingerbread.

    2. The dough should be sticky
      Unlike many other doughs, the dough for vegan gingerbread should be sticky.

    3. Don’t overbake!
      It’s normal for vegan gingerbread with applesauce to still be soft at the end of baking. It will firm up as it cools.

    4. Even better the next day
      Let the gingerbread rest for a day before eating so the flavors can fully develop.

      Frequently Asked Questions

      Traditional gingerbread is often not vegan, as it usually contains animal-based ingredients such as eggs, butter, or honey. Our recipe, however, works without these ingredients and is still incredibly delicious! Gingerbread without eggs is the new Christmas hit!

      Gingerbread dries out very quickly if it’s baked even just one minute too long. If your vegan gingerbread turns out too dry, you can save it by placing it while still slightly warm into a tightly sealed cookie tin, adding a slice of apple or orange, and storing it airtight in a cool place for a few days.

      Of course! If you like both ingredients, you can simply add them to the dough. Other finely chopped dried fruits such as apricots or dates also pair wonderfully in terms of flavor with vegan gingerbread.

      We use a delicate gingerbread cream for our gingerbread, creating wonderfully vegan, soft gingerbread. It adds a festive aroma and an incredible creaminess to the recipe.
