    Preheat the oven to 180 degrees Celsius (top/bottom heat).

    Prepare the flaxseed egg. Mix 1 tbsp flaxseed with 3 tbsp boiling water and let it swell briefly.

    Cream the vegan butter with the maple syrup and coconut blossom sugar, then gradually stir in the applesauce, milk, and vanilla extract. If the ingredients don’t combine properly, don’t worry – they will!

    Mix flour, protein powder, orange peel, baking powder, and salt, then briefly stir this mixture together with the flaxseed egg into the dough. Caution: Do not overmix the dough!

    Gently fold in the chocolate chips and soy crispies.

    Take a 10-minute break – let your dough rest covered in the fridge. Meanwhile, preheat the oven to 180 degrees Celsius (top/bottom heat).

    Now place 1 tbsp of cookie dough each on a baking sheet lined with parchment paper. Press them down slightly and add the remaining chocolate chips on top as a topping.

    Into the oven it goes: Bake your protein cookies for about 10-12 minutes. The cookies should be golden brown and slightly crispy at the edges. Don’t be alarmed: inside they will still be very soft at first – they will firm up later.

    Are your cookies oddly shaped? Just take a thick glass, place it over a still warm cookie, and make quick circular motions. This will quickly shape your cookie nicely.

    Let the cookies sit on the baking sheet for 5 minutes, then cool completely on a wire rack. This gives them the perfect texture.

    You can easily store leftovers airtight at room temperature or in the fridge.
