    Instructions

    1 Preheat the oven to 180°C (top/bottom heat).
    2 Prepare the flax egg: mix 1 tbsp flaxseeds with 3 tbsp boiling water and let it sit for a few minutes.
    3 Beat the vegan butter with maple syrup and coconut sugar until creamy, then gradually mix in applesauce, milk, and vanilla extract. Don’t worry if it doesn’t combine perfectly yet – it will later!
    4 Mix flour, protein powder, orange zest, baking powder, and salt, then fold this mixture together with the flax egg into the dough. Be careful not to overmix!
    5 Gently fold in the chocolate chips and soy crispies.
    6 Let the dough rest covered in the fridge for 10 minutes. Meanwhile, preheat the oven to 180°C (top/bottom heat).
    7 Scoop 1 tbsp portions of dough onto a parchment-lined baking sheet, flatten them slightly, and add a few extra chocolate chips on top.
    8 Bake your protein cookies for about 10–12 minutes until golden brown and slightly crisp around the edges. Don’t worry if they seem soft in the center – they’ll firm up as they cool.
    9 Cookies look uneven? Take a round glass, place it over a warm cookie, and swirl in quick circular motions to shape it perfectly.
    10 Let the cookies cool on the tray for 5 minutes, then transfer to a rack to cool completely for the perfect texture.
