    Zubereitung

    Peel, wash, and chop the vegetables. It’s enough to roughly chop everything since we will puree the soup at the end anyway.

    Heat the oil in a pot and sauté onions, garlic, and potatoes. Add the onion first to the pot and add the other ingredients a little later.

    Pour everything with the vegetable broth. Add a bay leaf and let your soup simmer with the lid on for about 10 minutes. If you want to use the broccoli stem as well, you can cut it small and add it too.

    Now it’s time for the broccoli florets: add them to the soup and let everything simmer gently for another 10 minutes on low heat.

    Remove the bay leaf from the soup! If you want some soup garnish, you can now fish out some broccoli florets from the pot and set them aside.

    Puree the soup with an immersion blender and season with salt, mustard, pepper, and lemon juice. If the soup is too thick for you, you can add a little more broth.

    Our secret tip: If you want the soup to be really juicy green, you can puree some parsley with it.

    Distribute the soup into deep plates or bowls and garnish it with parsley, a swirl of plant-based cream or coconut milk, roasted seeds and kernels, croutons, or a dollop of plant-based yogurt. A few chili flakes add a delicious spiciness to the broccoli soup (vegan), and a few baked broccoli florets provide a varied crunch.
