    There’s nothing better in the cold season than a warm, hearty soup. Our broccoli soup is vegan, super quick to make, and pure comfort in a bowl.

    • 100 g potatoes
    • 1 garlic clove

    • 400 ml vegetable broth 
    • 0.5 bay leaf
    • 200 g broccoli  
    • 0.5 tsp mustard

    Instructions

    1 Peel, wash, and chop the vegetables. It’s fine to roughly chop them since we’ll blend the soup later anyway.
    2 Heat the oil in a pot and sauté onions, garlic, and potatoes. Add the onions first, then the other ingredients a bit later.
    3 Pour in the vegetable broth. Add a bay leaf and let your soup simmer for about 10 minutes with the lid on. If you’d like to use the broccoli stem, chop it finely and add it as well.
    4 Now it’s time for the broccoli florets: Add them to the soup and let everything simmer gently for another 10 minutes over low heat.
    5 Remove the bay leaf from the soup! If you’d like some chunks in your soup, you can now take out a few broccoli florets and set them aside.
    6 Blend the soup with an immersion blender and season with salt, mustard, pepper, and lemon juice. If the soup is too thick, add a little more broth.
    7 Our insider tip: For an extra vibrant green color, blend in a bit of parsley.

    Divide the soup into bowls and garnish with parsley, a swirl of plant-based cream or coconut milk, roasted seeds and kernels, croutons, or a spoonful of plant-based yogurt. A few chili flakes add a nice kick, and some baked broccoli florets make a crunchy topping.
