Zubereitung
For the cream, you can mix skyr, quark, vanilla protein powder, cashew butter, and coconut blossom sugar in a large bowl. Make sure the protein powder dissolves completely and no lumps form. If the mixture is too thick (it should have roughly the consistency of Greek yogurt), you can add a few tablespoons of plant milk.
Now let's take care of the vegan protein. This will make your protein tiramisu really airy later. Whip 100 ml of cold aquafaba with lemon juice until it has the consistency of stiffly beaten egg whites. It should be really firm, which usually takes about 4-5 minutes.
Important: Your bowl and hand mixer must be completely clean!
Gently fold the aquafaba in with a spatula. This way you keep the cream airy.
Attention: Don’t stir wildly anymore now!
Now it’s time to layer the protein tiramisu. You’ll need a dish about 20 x 20 cm. Quickly dip your ladyfingers (max 1 second!) into the espresso mixture and place a layer of the ladyfingers in the dish.
Next comes the second layer of ladyfingers, covered with the remaining cream. Smooth this layer as well.
Little reminder: You won’t need all the espresso, you can drink the rest afterwards if you want!
Just before serving, dust the high protein dessert with cocoa powder and enjoy the Italian classic! Any leftovers (if there are any) will stay fresh in the fridge for several days.

Vegan Skyr & Quark: These two ingredients replace the mascarpone used in traditional Italian tiramisu. This way, our version is not only vegan but also high in protein. And you won’t even notice that "something is missing" in our skyr tiramisu.
Aquafaba: Aquafaba is unsalted chickpea water, which you can buy in many supermarkets or easily make yourself by cooking chickpeas and collecting the water. Alternatively, you can also use vegan whipped cream.
Our (personally) world’s best egg-free tiramisu needs an ingredient that brings airiness – aquafaba is a popular vegan alternative that makes our cream really fluffy and creamy. Traditional recipes often use raw eggs. Our recipe is egg-free – so it’s not only vegan but also safer and more hygienic (keyword: salmonella).Protein Powder from Vetain: The protein powders simply increase the protein content of the tiramisu and make it what it is: an incredibly delicious high-protein dessert!
Bitter Almond Flavor: Tiramisu often contains alcohol – but so everyone can enjoy it, we skip alcohol in our protein tiramisu and instead use a flavor that gives a similar taste.
Cashew Butter: It gives our light tiramisu with quark a full-bodied and creamy mouthfeel – almost like a "real" tiramisu.
Sponge Fingers: Many high-protein tiramisu recipes use rice cakes or similar instead of sweet sponge fingers, which have higher protein and lower sugar content. We decided to make the protein tiramisu with sponge fingers because, for us, they simply make a good tiramisu. But of course, you can also make a high-protein tiramisu with rice cakes!
Protein Tiramisu with a Twist: The Best Tiramisu Variations
Tiramisu (whether with or without protein) is now available not only in the classic version but also in many other exciting varieties. With this tiramisu recipe, you can try other variations too – you just need to swap a few ingredients:
Protein Strawberry Tiramisu: Instead of espresso & coffee protein powder, use pureed strawberries & strawberry protein powder, and place fresh strawberry slices between the layers.
Protein Matcha Tiramisu: Instead of espresso & coffee protein powder, use a matcha protein shake, and add matcha protein powder to the cream instead of vanilla protein powder.
Protein Chocolate Tiramisu: Use a chocolate protein powder in both the cream and the espresso.
Protein Banana Tiramisu: Replace the protein powder in the cream with a banana protein powder and place fresh banana slices between the layers.
