However, a look at the nutritional values ​​of freeze-dried strawberries reveals that they actually contain a lot of sugar. How can that be? Why do freeze-dried strawberries have so much sugar? It's quite simple: Fresh strawberries consist of about 90% water. When they are dried, this water is removed from the berries, and as freeze-dried strawberries, they usually contain less than 5% water. What's left? Protein, fiber, <tc>Fat</tc> and carbohydrates such as sugar. These nutrients are now extremely concentrated in the dried berries. Whereas in 100 g of fresh strawberries z.B. While 4-5 grams of sugar are found in a single serving of dried strawberries, 100 grams of dried strawberries contain 60-70 grams! This is simply because the water that previously diluted the strawberries has been removed. For example, we've all dried something in the oven over low heat, right? The problem is that the products change their aroma and nutritional content when exposed to heat, as many vitamins, for example, are sensitive to heat. This is less cool - especially if you pay attention to a healthy diet. Freeze drying is a type of drying that is very gentle and preserves the taste, color and nutrients as much as possible. How does it work?

1. The berries are harvested and washed, sorted by size and sliced ​​(depending on the product).
2. The strawberries are then shock frozen. This means that they are cooled very quickly to a very low temperature. Hence the name “shock-frozen”. This helps preserve the nutrients. Very important: Currently our strawberries are not freeze-dried strawberries, but only frozen fruits.
3. Now it gets exciting: With the help of certain devices, the pressure in the container is reduced. As a result, the water in the strawberries that is currently frozen into ice changes to a gaseous state and practically disappears.
4. Now the strawberries are freeze-dried and deliciously crunchy. They are packed in special packaging so that they don't get wet again (then they become crunchy) and can make their way to you.

Freeze drying is a great way to preserve fresh fruit. This means you can eat delicious, regional strawberries even in the dead of winter. And as I said, compared to other drying methods, this method is very gentle: nutrients, taste and color are largely retained. Freeze-dried fruit is a practical alternative to fresh fruit.
